Casseroles

Our casseroles and side dishes are made fresh, never frozen, so we ask for a 48-hour notice when placing an order.

A half pan of each casserole or side dish yields 6-8 servings, and full pans yield 18-20 servings. All options are packaged in disposable tin containers ready for your oven.

Green Chili and Chicken Stack
Diced grilled chicken, roasted green chilies, onions, garlic, corn tortillas, Cheddar and Jack cheeses. This is like an enchilada that is stacked instead of rolled. The sauce is made with cream to help cut the sharpness of the green chilies

Sheppard’s Pie
Seared beef tenderloin, corn, carrots, onions, peas, and green beans combined in savory brown gravy, topped with mashed potatoes

Lasagna
This is traditional lasagna made with marinara sauce, Italian sausage, sautéed mushrooms, seasoned ricotta, parmesan and mozzarella cheese

King Ranch Chicken
Diced grilled chicken, mushrooms, corn tortilla strips, green chilies, layered with a southwestern cream sauce, topped with cheddar and jack cheeses

Chicken Cobbler
Seared, diced chicken breast, carrots, onions, peas, corn and green beans combined in a rich velouté sauce, topped with a savory cobbler topping. This is like a “Pot Pie,” but the crust is replaced with a cobbler topping

Tuna Noodle Casserole
Wide egg noodles, tuna, mushrooms and peas, combine with a mushroom wine sauce, topped with cheddar cheese and crushed potato chips

Beef Enchilada Casserole
Seasoned ground beef, smoked corn, onions, garlic, tomatoes, corn tortillas, layered with a Tex-Mex sauce, topped with cheddar cheese and Chihuahua cheese. This is an enchilada that is layered rather then rolled

Penne Rustica
Penne pasta, Italian sausage, sun-dried tomatoes, roasted zucchini, Brie and cheddar cheeses, combine with a roasted vegetable cream sauce

Chicken and Spinach Lasagna
Diced seared chicken, spinach, mushrooms, onions, garlic, mozzarella and Parmesan cheeses. This is a popular dish in northern Italy. It is made with a Béchamel sauce, a white sauce seasoned with salt, pepper and nutmeg

Cajun Bowtie Pasta
Bowtie pasta, blackened chicken, roasted zucchini, roasted yellow squash, red peppers and onions combined in a pesto cream sauce, topped with Parmesan cheese
